Soup, Soup, Soup
Apropos of nothing, and just for fun, I thought I’d round up a few soup recipes to share with you. Well, apropos of something actually, as it is snowing and 16 degrees. Soup weather for sure.
While this blog is about reading, education, parenting, and Catholicism, it’s also a bit about me. And frankly, I love soup. The making, eating and discussing of soup is also a bit of a legacy thing in my family.
My grandma Betty was a legendary soup maker. My dad’s version of her chicken noodle soup is so beloved that there is an open discussion about who can make the recipe and with what accuracy in case he passes away unexpectedly. Which is all the funnier because he is relatively young and in fine health (thank goodness). But, a good soup recipe will trump reason and even good manners any day.
So, on this particularly cold Tuesday when the weather feels far more wintery than autumnal, I think I’ll make a pot of soup. You should too!
Tried and True Favorites:
All hail Queen Ina! This soup is excellent. If you can’t track down fresh basil this time of year, I’ve used high-quality pesto in the past as a substitute and it’s still excellent.
This is a top 5 soup for me. Vegangela has several modifications listed with the recipe. If you are at all a fan of curry, you’ll love this.
This is not chicken noodle soup, but rather chicken noodle soups heartier, southern cousin. There are many recipes for chicken and noodles out there, but many include condensed soup. This version is relatively “clean” and benefits from the addition of Reames noodles.
There are many versions of this soup that rely on dumping a bunch of cans into a crockpot (and a few are pretty good). But for the best results, treat the broth as importantly as you would if it was homemade chicken noodle soup. I don’t follow an exact recipe, but this one is good and the consistency I’m looking for.
Superfast, super easy dinner staple. This version uses orzo instead of rice, but just swap our cooked white rice for a more original take.
I’ll make a version of this tonight. When I lived in New York, our local diner made this soup with parmesan and egg whisked in (a sort of Italian Wedding-Egg Drop hybrid). The result was tiny, light egg dumplings in the broth.
